Spicy Nut Mix

This savoury and tasty snack is easy to prepare and is ideal to overcome the afternoon hunger pangs during work hours. If you frequently reach for highly processed snacks, that tend to be high in fat, salt and sugar this recipe may help combat those less nutritious options. Its high in omega 3 and 6 unsaturated fats. Is high calorie snack so I limit it to around 30g per serving. This is an adapted recipe from a book by Walter Willett (Eat, Drink & be Healthy) which I highly recommend.

Servings: 15 Cooking Time: 8-10 minutes Assembly Time: 2-4 minutes

Ingredients

  • 1 cup raw cashews

  • 1 cup almonds

  • 1 cup salted roasted soy nuts

  • 1 cup pecans

  • 1½ tsp olive oil

  • 1 tsp chilli powder

  • ½ tsp salt

  • ½ tsp dried oregano

  • ½ tsp paprika

  • ¼ tsp onion powder

  • ¼ tsp black pepper

Method

Preheat oven to 190ºC OR 375ºF

  1. Combine all ingredients for the nuts in a small bowl until coated, place on a non-stick baking tray & bake for 8 to 10 minutes (shake half way through bake) until roasted.

  2. Once cool transfer to an air-tight container.

  3. Portion (30g) into small sandwich/freezer bags for the perfect desk snack.
